Spiced Medallions of Beef
With Star fruit
Ingredients

Beef Tenderloin 100 gm
Star Fruit 80 gm
Tomato - diamond cut 3 gm
Cucumber - diamond cut 30 gm
Shallot Slice 15 gm
Khmer Dressing 50 gm
Sugar, Salt + Crushed 10 gm
Black Pepper Taste

Preparation
for salad

Slice beet tenderloin 1/2cm thick, four to five pieces.

Dip beef
slices into Khmer dressing, remove beef from dressing ,
let for 15 minutes.

Season beet to
taste with salt and pepper.

Sear both sides of
beef on high heat, very quickly.

Season star fruit
with salt, pepper and sugar.

Sear both sides of
star fruit on high heat very quickly.
-
Mix remaining
ingredients with 1/2 of the dressing.

Add beef and star
fruit to remaining ingredients.

Arrange all
ingredients on plate. Add remaining Khmer dressing to the
salad.

Garnish with lime leaves and
herb cigar.
Preparation

Place mint and basil leaves in spring roll skin.

Roll spring roll skin
into cigar shape. Ensure for a tight roll.

Seal the ends of
the skin with flour and water mixture.

Deaf - fry spring roll skin.
Recipe
for Khmer Dressing Bird chili chopped fine. 3gm
Garlic chopped fine. 20 gm
Palm sugar. 15 ml
Tamarind juice. 30 ml
Lime juice. 50 ml
Corn oil. 50 ml
Fish sauce. 50 ml
Soya sauce. 50 ml
Lemongrass chopped fine. 10 gm
Lime leaf chopped fine. 9 gm
Salt, crushed black pepper
to taste.

Mix all ingredients together.
