Shark’s Fin
in Red Sauce
Ingredients:
100 grams Shark’s fins
70 grams Crab meat
30 grams Mushrooms
400 grams Chicken broth
20 grams Oyster sauce
10grams Soya sauce
04 grams Accent
20grams Starch
Preparation:
1.
100
grams shark’s fins-soak in water overnight. Boil for 5hours. Steam
for 3 hours.

grams mushroom – soak in water for 2 hours.

grams crab meat (pincers- steam for 40 minutes and take off shell.
Cook:
1. Heat
earthen pot for 3 minutes.
2.
Put
in 400 grams of chicken broth and 10 grams oyster sauce and cook for
2 minutes.
3.
Add
10gram’s Soya sauce and 10 grams accent and cook for 2 minutes.
4.
Add
in 20 grams starch, put in the shark’s fins and cook for 4
minutes.
5.
Put in the crab meat, mushrooms and Chinese cooking wine and cook
for 2 minutes.
Dish is ready to server.
Serve with beans sprouts/ Chinese parsley along with chili sauce,
black vinegar and ight Soya
sauce.
